How traditional tempeh is made
Traditional tempeh making starts with soaking soybeans and removing their skins. The beans are cooked, drained and cooled before a fermentation starter is mixed in. During fermentation, Rhizopus culture grows around the beans and binds them into a firm cake. Leaf wrapping is part of this tradition. Methods vary between producers.
